#beef brisket

A long-running Gough Street specialist in beef brisket and tendon noodles, operating in the compact, communal style of a classic Hong Kong noodle shop. Go for the brisket, tendon or a mixed bowl with noodles and treat the tight seating and brisk service as part of the institution rather than a drawback.

A third-generation noodle shop whose family business dates to 1956, still using a bamboo pole to knead dough for its characteristic springy texture. Wontons and pickles are made in-house; the signature order is tossed noodles with shrimp roe and braised beef brisket and tendon.
