#fermentation

Hong Kong’s pioneering closed-loop cocktail bar, founded in 2020 by Agung and Laura Prabowo with a sustainability-first approach built around local and upcycled ingredients, in-house fermentation and low-waste techniques. The laboratory-like bar includes a climate-controlled fermentation room, while the 'One Penicillin, One Tree' programme links a signature cocktail to reforestation in Borneo. Ranked No. 49 on Asia’s 50 Best Bars 2026 after placing No. 27 in 2025.
