Via del Pantheon 55, Rome

A family-run Roman restaurant at Via del Pantheon 55, founded by Fortunato Baldassarri in 1975 on the site of an older Roman hostelry with a gastronomic history reaching back to the 18th century. Its kitchen balances Roman and broader Italian tradition with house-made bread, desserts and egg pasta, seasonal ingredients, fresh fish from Anzio and a substantial wine cellar; this is the Pantheon restaurant from my May 2024 dinner.
