A St James’s institution whose lineage begins with George William Wilton’s shellfish-monger near Haymarket in 1742. Still presenting itself as the London home of oysters, it pairs impeccably sourced seafood with seasonal game, formal service, an oyster bar and the old-fashioned theatre of a carving trolley—continuity expressed through food rather than nostalgia alone.
